SOUP BASE
This hot and fiery soup is seen only in the Indo-Chinese restaurants of India. When the weather is cold or I’m feeling unwell, I often make this soup. To boost the protein, you can add bits of leftover rotisserie chicken or tofu. Serve this with rice wine vinegar, Chilli-Soy Vinegar Sauce, or Indo-Sichuan Sauce on the side.
Most North American Jews are familiar with sweet noodle kugels. But there are also many savory noodle kugel varieties, which can include garlic, onions, mushrooms, or even spinach. This kugel is a recipe from my husband’s grandmother, Baba Billie. It has an extra garlic kick, fantastic mouthfeel, and a nice crunchy top. You can use fresh garlic if you want, but I think the jarred garlic in oil really is the preferred ingredient.
We like to make a big batch of these noodles for a night of staying in, eating noodles, and binge-watching whole TV series. These aren’t your standard takeout sesame peanut noodles. First off, there’s no peanut butter—instead, deep and distinctively nutty sesame paste and chili oil contribute the bulk of the texture and flavor. A hint of Chinese black vinegar, with its malty, slightly sweet bite, cuts the richness of the sesame paste and plays off the heat of the chili oil. Balanced and complex, these noodles hit all the right flavor notes.
I firmly believe that pasta is one of the love languages of the world. I’m going out on a very long limb here and saying this may be my favorite recipe in the book. (But don’t quote me after I’ve had a few miso chocolate chip cookies. I’ve got a thing for miso, okay?!) This. Carbonara. Is. Everything. It’s melt-in-your-mouth, ultra-umami creaminess in every tender bite. This is what you NEED to make if you’re trying to impress someone. It requires less time to make than it will take you to get yourself primped for the date. I can’t wait to hear how your night goes after this one.
This beauty is garlicky, gingery, and as spicy as you dare—it’s best when it bites back just a little. Most of the prep time for this East Asian–influenced pan-fried noodle dish is spent slicing (have your chef’s knife ready). Once that’s done, the dish comes together in minutes.
In my experience, if you tangle vegetables in a mess of fried noodles, your kids will be much more likely to eat them. To that end, yaki udo is a family-friendly stir-fry that’s heavy on plants and fungi.
Instant noodles wind up practically everywhere regular noodles do, and even occasionally where they don’t. For instance, I’ve seen people crunch into them straight from the bag. It’s no shocker, then, that the beloved product—called MAMA in Thai, in reference to the best-known brand—makes great fodder for yam. Yam is often translated as “salad,” and while the English word does the trick, it doesn’t do much justice in describing the room-temperature jumbles of vegetables, herbs, and proteins dressed with lime juice, fish sauce, and chiles. When MAMA enters the fray, yam becomes a hearty snack to share while you booze, the heat and salt compelling another swig, and then another.
We have been serving our soba salad since we opened CIBI in 2008. When I created this dish, I wanted to add a touch of western flavor so that it became a cafe-like dish as well as a CIBI dish. Many of our regulars come in just for this salad. This is a simpler version that you can cook at home anytime. All you really need in your cupboard is soba noodles, soy sauce and lemon!
