When it comes to beet salads, it’s hard to escape the ubiquitous combination of beets and goat cheese. The pairing works because the tangy, creamy, salty goat cheese is a great foil for the beets’ earthy sweetness. (Interestingly, beets’ sweetness is actually the result of a winter survival strategy. The sugars in beets act like antifreeze, keeping the fluid in their cells from freezing and forming destructive ice crystals.) But that doesn’t mean the combination hasn’t gotten a little tired. To reinvigorate the classic beet salad, we looked for ways to deal with the sweetness itself. By charring the cooked beets—essentially burning some of the sugar—we cut down on sweetness and add some complementary bitterness. We amplify that bitterness with crisp radicchio and toss it all with a dressing made from the beet cooking liquid. And to replace the goat cheese? A simple spread of feta and Greek yogurt adds plenty of creaminess. A final flourish of tart pomegranate seeds provides pops of bright acidity (while staying on message with the ruby color scheme), while fresh dill and tarragon round things out with some herbal notes.
Cochinita pibil is the pride of the Yucatan peninsula—a dish of smoky, slow-roasted pork marinated in a special blend of ingredients including cinnamon, allspice, and achiote (annatto) seed. Cochinita means “baby pig,” and the real-deal recipes use a whole suckling pig. Traditionally the whole thing is wrapped in banana leaves and then buried in a pib—a pit with a fire at the bottom. Here I use Boston butt and employ a two-stage “grill-and-swim” cooking process to make things a little more convenient and a lot juicier. Pregrilling the meat adds great flavor, while low and slow cooking in a water bath produces especially succulent meat—no pib required. Plus, you won’t have to fire up your grill on taco night, so you can focus on making Homemade Corn Tortillas or that sweet playlist you’ve been meaning to put together.
Eggs are the poster child for sous vide cooking: The technique produces eggs with unique texture, and the method is hands-off and easily scalable.
This recipe is easiest to do when using a sous vide device -- either a self-contained insulated box called a water oven or a stick-style water circulator along with a pot of your choice. You can also follow our instructions below for using a small (8- to 12-quart) cooler and a digital thermometer. We’ve tested this recipe using both gram measurements and traditional U.S. volume and weight measurements, so you can pick the one that works best for you. This recipe safely achieves pasteurization (144 degrees Fahrenheit/62.2 degrees Celsius for at least 6 minutes) and then continues to heat the yolks to create a sauce with the ideal texture. Store-bought, in-shell, pasteurized eggs can also be used without any changes to the recipe. The cooking time depends on the number of yolks, so this recipe cannot be scaled up or down without making adjustments. Don’t discard the whites—save them to make angel food cake or meringue cookies or freeze them for later. This sauce can be refrigerated for up to one week.
