While it’s not essential to rotate the boniatos as they cook, it does ensure that they cook evenly. When testing for doneness, poke all the way through to the middle to be sure there are no undercooked pockets hiding in there.
Ingredients
4 medium boniatos, well washed
1/2 cup sour cream
2 tablespoons maple syrup
1/2 teaspoon ground nutmeg
Salt and pepper to taste
Directions
1. Preheat the oven to 400 degrees.
2. Place the boniatos on a foil-lined pan and bake, turning every 20 minutes or so, until they can be easily pierced all the way through with a fork, 1 hour to 1 hour and 15 minutes.
3. Meanwhile, in a small bowl mix the sour cream, maple syrup, and nutmeg until the mixture is of an even consistency.
4. Remove the boniatos from the oven, split down the center using the tines of a fork, top each with a generous spoonful of the maple sour cream and serve, passing any remaining sour cream separately.
