Grafton Village Cheddar: "The greatest cheddar in North America," according to Steve Jenkins. This raw-milk Vermont Cheddar is made the old way, in small batches and aged the longest of all (4 years). It's flavor perfection.

Shelburne Farmhouse Cheddar: A Vermont Cheddar handmade with milk from a small herd of award-winning Brown Swiss cows. Although not aged as long as the Grafton cheddar (the Shelburne ages six months to two years), this is still a great cheese.

Tillamook Cheddar: A premium Cheddar from an Oregon cooperative. Steve loves their extra-sharp Vintage White Cheddar that's aged for 18 months.

Black Diamond: This cheese from Ontario is mostly a marketing name these days. Steve thinks it's overpriced for the quality.
