Q: Why shouldn't I measure dry ingredients in a glass container?

Lynne: This is a very important element in baking and cooking, and you may not have heard about it before. It's just not discussed. Dry ingredients cannot be leveled properly in a glass measure. All dry ingredients should be measured in solid measures so you can level off properly. All liquids should be measured in a clear cup. There is a slightly different quantity between the two. Buy yourself a set of dry measuring cups as well as a liquid measuring cup. When you're buying those dry measures, look on the cups to see that "U.S. Standard" is printed somewhere on them. It may be abbreviated to STD. I have discovered there are many out there that are not consistent.
