For the best marinated olives recipe, we started with good brined olives that still contain their pits, which have a better flavor than pitted olives. For the marinade, we started with a base of olive oil and added garlic, herbs like thyme, and red pepper flakes. In addition to these basics, we liked thinly sliced shallots, which softened in the mixture and contributed their welcome allium bite, and grated orange zest for a lively citrus kick. The real surprise in our marinated olives recipe came when we added a splash of anise-flavored (or Pernod), which enhanced all the other flavors.

At ancient Persian banquets, you’d be served a sort of canapé called bazmaward or awsat, which was essentially thin flatbread (but not always) filled with roast meat, such as the following baridas, rolled up and sliced into pin-wheels. Today, we call these aarayes in parts of the Middle East. Bazmaward make for wonderful snacks or finger food to decorate the table with.
This recipe is admittedly a little basic, but sometimes, basic is good. Basic is a garlicky, white winey, tomatoey broth that will take care of your expensive seafood, cook it gently, and make everything taste delicious.

This salad has much more than an assortment of flavors and textures. The beans and eggs can be cooked ahead, while the vinaigrette can be made several days in advance, leaving assembly of the salad for the last minute. It's lovely for lunch or as the anchor to dinner. Dress the beans in advance of eating to absorb the flavors of the vinaigrette.
For a lighter main course, do this one-dish supper of pasta with greens, chickpeas and shrimp. If you prefer a strictly vegetarian meal, double up on the onion and the chickpeas, eliminating the shrimp.
Roast the lamb slowly, baste often and use a little more red wine if needed. Anchovies are the secret ingredient here -- you don't taste them, but they enrich all the other flavors. The pan sauce is lush and a only a small spoonful is needed to moisten the meat.
