SOUP BASE
This dish is the star of thickening sauces. At the end of cooking this meal you will have a mouthwatering sauce, but it will need to be thickened. Once you learn this skill, you’ll never look back.
This dish comes together very quickly, so make sure you prep everything before sautéing the chicken.
I will probably get a lot of flak for this recipe. ‘What?! You’ve taken us through this entire exercise and now you’re giving us a recipe that is not authentic?’ I know, I know, but I call it Gateway for a reason. As a nice entry-level weekday cassoulet, this is not bad. Try it, tweak it, double it for your friends, and then, when you are ready, go tackle the real thing!
INGREDIENTS
I first had this one-pot dish in Tel Aviv, but its flavor notes—a medley of savory, sweet, and sour—are similar to other dishes you’ll see throughout the Middle East. Pistachios browned in butter, sweet nuggets of Medjool dates, and piquant lemon juice bring out the best in lamb and rice seasoned with fragrant cinnamon, nutmeg, and cumin. For the most robust flavor, use a high-quality purchased chicken stock, or, even better, homemade stock.
Lisa’s first trip to Dakar was special for many reasons, not least of which was her introduction to my aunt Marie’s sauce feuille. This dish is a genuine representation of my roots—generous, heartwarming, and nourishing in all the right ways. It’s traditionally made with moringa, cassava or sweet potato leaves, and cabbage. Here, I use collard greens, which are easy to find and still create that homey green color and rich, textured flavor, but if you can source the more traditional cassava leaves, use them!
Serve with Rice and Tortillas, garnish with cilantro & lime
