This recipe offers an elegant twist on the classic pineapple upside-down cake, a dessert that’s been made and reimagined for decades. That’s how much people rely on it in their diet. I was never crazy about buckwheat when I was a kid. But when mom made me this soup, everything changed. It has the most alluring deep flavor of buckwheat and mushrooms with the right balance of sweetness and earthiness. It’s just like being wrapped in a cozy blanket and taking an autumn walk in a forest. I love eating this soup piping hot with the darkest rye bread I can find.
This salad is my riff on kasha, the name given to toasted buckwheat groats cooked (in water or milk) throughout Russia and Ukraine. The word kasha basically translates as ‘porridge’ but although in the west we think of porridge as a breakfast food, kasha is commonly a comforting, hearty, savoury dish or side at lunch or dinner – often far less liquid and overcooked than oat porridge. By all means you can serve this salad hot, but I especially like it served at room temperature. The key really is toasting the buckwheat first – it brings out an extra nutty flavour and also stops it all from being too mushy.

You could use ground turmeric for this recipe if you can’t find fresh, but bear in mind its flavour is more powerful than that of fresh. The lentils and chicken work very well together, but if you prefer you can make a vegetarian version by omitting the chicken and doubling the quantity of lentils. And, as a change from soup, you could try this dish with rice and a dollop of yogurt on top.
