Close to a homemade ginger ale but with more of a nip, this is a formula for an icy spiced drink made to order. Simple Syrup is steeped with fresh ginger and fresh lemon juice then mixed with sparkling water for an effervescent kick. To mellow that kick out, turn it into a punch by adding a little light rum, then relax. Drink it over ice with lemon slices and, if you like, halved stalks of lemongrass as stir sticks.
Don't buy peas without tasting them. They should be sweet and juicy.

If any of your guests have a problem with shellfish, you can make this soup without the shrimp and it will still taste sublime, just set a helping of soup aside before you add the shrimp. Look for fennel bulbs with light green fronds in the center.

This combination of sorrel, smoked salmon, and eggs makes one of the best brunch dishes I've ever eaten. When sorrel leaves are shredded and cooked in butter, they wilt dramatically and quickly turn into a puree, almost as if they melted. Add some cream, and you have a lemony sauce that complements the smoked salmon more keenly than a rich hollandaise. Just remember it takes a lot of sorrel leaves to make a little bit of sauce, so make this dish when you have plenty to harvest or can buy big bunches at the market, usually in the spring or early fall.
An ideal spring dish and one of those combinations that always surprises people with it goodness. Slow braising sweetens and mellows turnips and garlic into a superb side dish.
