This is Chef Yia Vang’s essential marinade for grilled meats. He calls the combination of ginger, lemongrass, shallots and garlic the Hmong version of sofrito. It’s especially good on pork and beef.
Ingredients
1/2 C Finely Chopped Ginger
1/2 C Finely Chopped Lemongrass
1/4 C Finely Chopped Shallots
1/4 C Finely Chopped Garlic
1/4 C Fish Sauce
3 Tablespoon Oyster Sauce
1/4 Cup Canola Oil
2 Tablespoon Salt
3-4 Chopped Thai Chilies
Combine all the ingredients in a large bowl or resealable bag and add whatever protein you want to marinade.
