Chicken Orzo

Prep: 5 minutes  •  Cook: 25 minutes  •  Serves 8 • Entree • Greek •  Italian

Carrots, celery, and onion are the base for any good comfort meal. Using rotisserie chicken puts this meal on the table in under thirty minutes!

INGREDIENTS

1 tablespoon olive oil

1 tablespoon unsalted butter

1 cup diced carrots

1 cup diced celery

1 cup diced white onion

4 cloves garlic, minced

6 cups low-sodium  chicken broth

¼ cup fresh lemon juice

1 pound orzo pasta

1 teaspoon kosher salt

¼ teaspoon ground black pepper

2 cups shredded rotisserie chicken

¾ cup grated Parmesan cheese

¼ cup chopped parsley

DIRECTIONS

Chicken Orzo

1. In a large skillet, heat oil and butter over medium-high heat. Sauté carrots, celery, and onion until soft. Add garlic and cook for an additional minute.

2. Stir in chicken broth, lemon juice, orzo, salt, and pepper. Bring mixture to a boil then reduce to a simmer. Cover and cook for 20 minutes or until orzo is cooked and liquid is absorbed.

3.  Stir in rotisserie chicken until heated through.  Stir in Parmesan cheese and parsley. Serve warm.
