This white pozole recipe from comedian Dulcé Sloan of The Daily Show on Comedy Central is her quick go-to for days when she’s feeling under the weather. An extremely easy soup to make, made with chicken thighs, hominy, and aromatics, it might be your next comfort food as well. One word of advice, don’t skip the garnishes! INGREDIENTS 

  • 10 cups water

  • 2  15 oz can hominy, rinsed and drained

  • 1 yellow onion, diced

  • 8 cloves garlic, chopped

  • 1 tsp oregano

  • 2 tsp cumin powder

  • 2 lbs bone-in chicken thighs

  • Salt, to taste 

Garnish, optional:

  • 1 cup shredded cabbage

  • 4 radish sliced

  • Sprinkle dried oregano

  • Tortilla chips, crumbled

  • Cilantro, chopped

  • Lime wedges

  • Jalapenos, sliced

 DIRECTIONS 

  1. In a large pot, bring water to boil. Add the hominy and cook for 20 minutes to soften. Add the diced onion, garlic, oregano, cumin, and chicken to the pot. Season with salt. Simmer 40-45 minutes, or until the chicken is cooked and tender, skimming the excess fat and impurities from the surface of the broth every so often. 

  2. Remove the chicken thighs from the pot and let cook slightly. Pull meat from the bones and shred. Return the chicken back to the pot. Continue simmering until the broth thickens and becomes slightly cloudy, about 5-10 minutes.

  3. Serve the posole with shredded cabbage, radish, jalapeno, dried oregano, tortilla chips, cilantro and a big squeeze of lime juice.
