INGREDIENTS
10 cups water
2 15 oz can hominy, rinsed and drained
1 yellow onion, diced
8 cloves garlic, chopped
1 tsp oregano
2 tsp cumin powder
2 lbs bone-in chicken thighs
Salt, to taste
Garnish, optional:
1 cup shredded cabbage
4 radish sliced
Sprinkle dried oregano
Tortilla chips, crumbled
Cilantro, chopped
Lime wedges
Jalapenos, sliced
DIRECTIONS
In a large pot, bring water to boil. Add the hominy and cook for 20 minutes to soften. Add the diced onion, garlic, oregano, cumin, and chicken to the pot. Season with salt. Simmer 40-45 minutes, or until the chicken is cooked and tender, skimming the excess fat and impurities from the surface of the broth every so often.
Remove the chicken thighs from the pot and let cook slightly. Pull meat from the bones and shred. Return the chicken back to the pot. Continue simmering until the broth thickens and becomes slightly cloudy, about 5-10 minutes.
Serve the posole with shredded cabbage, radish, jalapeno, dried oregano, tortilla chips, cilantro and a big squeeze of lime juice.
