The first stop on my coffee cart treat quest (second stop, Raspberry Mazurkas, page 108) is the elusive Pink Cookie. Uncle Seth’s Pink Cookies are palm- size cookies scented with cardamom and topped with a pink- tinted cream cheese and almond frosting. Here, I’ve made them into a pat- in- the pan cookie bar with a layer of perfectly pink cream cheese frosting scented with a bit of almond extract.
Almond butter is pretty mild in flavor, but crisp almonds, chocolate, and punchy freeze- dried strawberries make these a special little snack. Feel free to substitute peanut butter or any other nut butter for the almond butter. If your almond butter is unsalted, add an additional pinch of salt to the dough. Toast the almonds in the oven while the bars are baking to save yourself some prep time.
This is my version of a flourless orange cake which I love to eat. It’s based on a classic Italian whole orange cake that is traditionally flourless (and gluten-free), relying on eggs to bind it, and whole oranges (pick seedless varieties) boiled in water until soft, then puréed. Polenta (cornmeal) lends a beautiful golden colour and the cake utilises a whole orange to provide a wholesome orange flavour! The skin contains a huge amount of aromatic oils that impart their beautiful citrus flavour and a hint of bitterness, and the pithy skin contains large amounts of fibre and pectins. Use a gluten-free baking powder to keep it gluten-free.
Detroit’s Breakfast House & Grill (now the Hudson Café) was where I first experienced the textural contrast of pillowy waffle and crunchy fried chicken skin, and the sweet-and-salty harmony of juicy dark meat chicken and a slick of maple syrup. The pairing was so satisfying that I fell into a ritual of having it delivered every Sunday morning after a late night out. It wasn’t until many years later that I thought to try this dish in my own style using Hong Kong egg waffles (aka eggettes) and karaage (small bites of Japanese fried chicken). The combination— enhanced with the use of Szechuan peppercorns in the maple syrup and splashes of chili oil—became so popular that I was constantly encouraged to enter local fried chicken and waffle competitions (I never could bring myself to; I don’t really enjoy competitive cooking). I particularly like tearing up the waffle into little individual pieces, then taking a fork and stabbing into one of those pieces, then stabbing a piece of chicken, then stabbing another piece of waffle. You now have a tiny and perfect fried chicken and waffle sandwich that you can eat plain or dunk into a ramekin of warm Szechuan-spiced maple syrup. The waffles are best made in a Hong Kong–style waffle/eggette maker, which they sell online in varying levels of quality. I understand it’s a very specialized thing and of course you’re free to use whatever waffle maker you already have, but the experience won’t be quite the same without one. I’ve heard you can try to sub vanilla pudding mix for custard powder, but I’ve never tried it myself.
This is one of my all-time favorite savory breakfast items. I created this recipe for a client’s child—a picky eater who wouldn’t touch any vegetables. I took some popular kid foods—potatoes, eggs, cheese, and milk—mixed them with some colorful veggies, then baked the mixture on a sheet pan. Cut into palm-sized rectangles, the resulting savory “pancakes” were a hit. They taste as good as they look and are filled with gut-friendly nutrients, including fiber and prebiotics. I like to use a box grater, but if you prefer a food processor or mandoline, that’s fine. Make sure not to overblend with the food processor.
If ever there was a weekend Shabbat cult food, jachnun—deep golden coils of buttery dough baked low and slow—fits the bill. As is the case with yeasty, brioche-like kubaneh bread, jachnun, which contains only baking powder, is traditionally placed in the oven or on a hot plate before Shabbat on Friday, then devoured the following morning after synagogue prayers. It’s sold in almost every makolet (mini-market) and from food trucks and carts all over the country, and in the neighborhood where I live (Tel Aviv’s Yemenite Quarter), tiny jachnun joints (usually open only on Friday and Saturday) sell it by the piece with its traditional accompaniments: resek (grated tomato), schug (hot sauce), and hard-cooked eggs.
Okay, now don’t freak out, but there is mayonnaise in this cake. I know: crazy. But it takes the place of the oil in the recipe, as well as the eggs (though, yes, I do throw in one, for good measure). And the texture is so perfect, as well as the flavor, that you need to put any mayo-phobias behind you and get baking. The marshmallow frosting here is epic, but if you’re just not feeling like pulling out your stand mixer for it, I totally understand and suggest you glaze this cutie with Cream Cheese Glaze instead.
Something magical happened the day I decided to dump a container of fresh ricotta into my standard biscuit recipe. I thought I would get lumps and layers of cheese in the biscuits, but I got something better than that. The ricotta melts into the biscuit in most places and creates a fluffy crumb that I had been trying to achieve for years but never knew the secret to. These are dangerously addictive. Proceed with caution.
